I am a 33 year old male. 6ft & 275lbs. I have a very large build so my ideal weight is around 200lbs not the 185lbs that you will find on most charts. I have started a diet. I am a little confused about what I am trying to avoid to get the best results from my diet. Calories, Calories from fat, carbs….. ? I have for the last week been looking only at the total calories in food and limiting my caloric intake to 800 to 1000 a day. Plus drinking massive amounts of water. I have lost 12 pounds. I do not know if it is ok to eat apples, bananas, oranges and such. I keep getting different answers. What I really need is to sit down with a nutritional consultant but there are not any in my area. Does anyone have any advice or know of a nutritional consultant that can contacted by phone? A web site? I am willing to pay for a service of this kind.

So originally I was planning on majoring in Dietetics but I want to transfer to a school that doesn’t offer that program. I was thinking instead I’d major in Biology for Health Professions. But can only Registered Dietitians work at clinics or have their own practice? Or can I get certified through some organization to have my own consultations?

You can be a consultant to anyone who will hire you as one: there aren’t specific qualifications for that umbrella kind of classification. However, not having an RD will be a serious drawback. You don’t have much credibility as a nutrition consultant without a nutrition-related degree (biology won’t cut it). If you want to be a dietitian or nutrition consultant, why would you transfer to a school that doesn’t offer a program in it? You need to get the education for the career you want, not get an education in something and then try to make it fit the career you want.

For health reasons I have recently completely changed the way I eat. The more research I’ve done, the more interested I’ve become and would like to start a career in holistic health and nutrition. But where do I start? How can I choose a good, distance learning collage, and what do I look for in their curriculum? Because of budget and my remote location I need alternative learning options. What diplomas, degrees or certifications will be granted after educational requirements are met and what career opportunities will be open to me? Having a well rounded education is important to me. How can I make contacts with others in the same career?

Well congratulations on your getting well yourself and wanting to share the wellth
with others! I would just generally recommend that instead of a program for Nutritional/Holistic Consultant or such to try to find an accredited program (by the American Dietetic Association) such as those found at the local county community college which may offer a 2 year associate degree program in Dietetic Technology. (Dietetic Technicians typically work under the supervision of a Registered Dietetician/R.D.) To go for schooling to become an R.D., one must complete a bachelor’s degree and then do a fieldwork component that is several months long. It’s crucial that one gets the right credentials so that the credibility is there, thus perhaps obtaining a higher customer base and proper information dissemination. Those ‘online schools’ such as from stratford career institute or penn foster (or University of Phoenix, Strayer University, Devry U, Kaplan U) are Not considered reputable to employers.
I’m not sure about job availability as a dietetic technician (and there is a registration exam to take and pass which gives more credibility), but it seems as though you would like to work in private practice or as some sort of consultant. It’s not a guarantee, but having the degree which includes actual fieldwork acting as a dietetic technician at area hospitals, nursing homes, wic (women, infants and children), and/or Head Start.
Perhaps you can start out with taking a course at the local community college in basic nutrition (such as Introduction of Nutrition) where one doesn’t necessarily need acceptance into the dietetics program as of yet, but just to see how you like the field and such.

I would go ahead and pursue your Master’s. If you get your undergrad in say personal nutrition or anything close and decide to drop the Master’s program, you can still fall back on your B.S. and internship your way to an R.D. certification. I was going to jump into a M.S. in nutrition, but it’s hard to find a school that offers it where I live. So, I settled for exercise science. There is a very interesting course that I’d be interesting in taking. It’s called a Certified Nutritional Consultant, but after some research, I can only find graduates working in Health Food Stores. Is there any other employment where the pay is better?
Donnie there’s nothing useless about learning anatomy and physiology, or about how herbal remedies interect with prescription medication, or so many other things you seem unaware of. If you don’t have anything positive to contribute, please don’t bother answering.

It’s possible but such jobs are hard to find. It might help to become certified by the American Association of Nutritional Consultants, but even though that organization has tightened up its requirements since the early days, they still are not that stringent and you would be considered to be much less qualified than a professional clinical dietician. Your best bet might be starting your own business and working independently. That too may be a struggle, at least at the outset. Given time and perserverance you could make a go of it, though it may require a second job to support yourself for a good length of time.
Regardless of the employment opportunities, unless the course is a scam of some kind it will likely provide valuable knowledge about diet and nutrition – and you may well end up more knowledgeable about those subjects than many mainstream doctors. One doctor friend of mine said that in his entire medical school education he had only one single lecture on diet and nutrition. Given how important their roles are in health and prevention, that is absolutely shocking!.
