Visit www. Zegee. com for more. The baking of wheat bread depends on its gluten content. Wheat has three layers the bran, the nutrient-rich germ and the enrosperm filled with starch and proteins. The important proteins in wheat are glutens. Those proteins are also found in rye, wheat, and barley. They is found in most types of cereals and in many types of bread. Not all foods from the grain family, however, contain gluten. Examples of grains that do not have gluten include wild rice, corn, buckwheat, millet, amaranth, quinoa [kinwa], teff, oats, soybeans, and sunflower seeds. Gluten can be removed from wheat flour by rinsing bread dough [dou] and kneading /niding/ it until all of the starch is removed. Gluten helps make bread elastic and provides it with the chewy texture it has when eaten. For this reason, gluten that is removed from dough is sticky and feels much like chewing gum. Gluten provides many additional important qualities to bread. For example, gluten keeps the gases that are released during fermentation in the dough, so the bread is able to rise before it is baked. In addition, gluten firms up when it is cooked and with the help of starch, helps ensure the bread maintains its proper shape. Gluten also has an absorbent quality, which is why bread is capable of soaking up broth. Because of this feature, gluten is often used by those on a vegetarian diet as an imitation meat. On the downside, gluten is believed to be partly responsible for causing bread to become . . .

Gluten WINE, BEER gluten-free gluten-free liquor and play it matter? Â

Eat only gluten-free products is essential for celiac disease or gluten intolerant person, so what about alcohol in general? Â Â

First, it seems that there are three different types: General liquor, beer and gluten-free gluten-free wines. Â

Gluten Free Alcohol

Many articles suggest that as long as alcoholic beverages not to wheat gluten or other grains that they are based are gluten-free. You fight with spirits such as grappa (grape), ouzo (anise, fennel spice plants) rum (sugar cane), sake (rice), etc. Other articles have suggested that gluten is destroyed in the distillation, so that all alcoholic beverages will be gluten free . Â

But a 1992 Flemish Celiac Society report found in several varieties distillates gluten. The values from zero to 200 mg gluten / liter, with the highest amount in the “Creme de Framboise (200 mg / L) and French Cognac VSOP varied was 180 mg / liter. Then, have speculated that the sites “gluten may be derived from the caramel,” and suggests that it is best for celiac disease contain it, “out of brown colored fluid is” (Ref. 1)

There is a note of caution that the detection of gluten in alcoholic beverages very unreliable as a “glue proteins, could have broken down to small (but still toxic) peptides and may in this case, a sandwich ELISA-type false cause negative results because in this case, you must always be two epitopes (binding sites for anti-serum) to a molecule to get a positive response. “(Ref. 1)

The difficulty with the general liquor, is that because this is not recognized as a major problem in society and as a test is difficult and potentially expensive to test vodka makers and their products almost as gluten-free label anytime soon, even if they contain gluten.

Your best option seems to be either completely avoid alcohol, or choose not to types of gluten grains, such as whiskey based.

Gluten-free Beer

The beer area outlined seems relatively clear. In the same study as above “The beer test, which consisted of a set of 50 different brands showed that most brands (35) immunoreactive protein contained in amounts of 1-200 mg / liter. Only 15 contained less than 1 mg / liter. There was a strong correlation between the wheat gluten and whether been used as an ingredient “(Ref. 1)

agrees with the Technical Officer of The Celiac Society of Australia and with the words, that “the (beer) brewing process, unfortunately, do not â?? normal” gluten-free beer “(Ref. 3)

“Beer contains gluten, either in the grains in the brewing process, or even the yeast can be even used to be cultivated in a medium that contains gluten. Therefore, if you are a celiac, you can not drink beer contains gluten, which will otherwise you are sick. “(Ref. 4)

All items are to the point that if a definitive celiac disease will drink beer, drink only beer they have gluten.

Gluten WINE

Wine is one of the most controversial areas of the gluten-free alcohol industry. The majority of articles suggest that wine is free of course, how it is made from grapes and no crops are involved in the process preservatives gluten. However, from other products is another story.

“Some wines in barrels that once contained another substance that could have prevented a sticky product. This is rare, but happens. Also, you want wine cooler. To avoid wine coolers are NOT gluten free because they contain barely malt.” (Ref. 3)

“There are also some concerns with cross contamination with wines that the practice involves the sealing of the drum of a flour-water paste, which is common with the European Union barrel manufacturers. Most of the US-based currently produces a neutral and food quality paraffin on the Siegel barrels during the construction process, but there are some manufacturers who import and use of flour-water-based barrel. “(Ref. 3)

Reference 3 also mentions that the hard paste part of the wheat gluten may not be in full of cleaning are removed and you most trust wines that made “almost always”, without a barrel aging process as “whites – Riesling, Sauvignon Blanc New Zealand, Italy Pinot Grigio, Bag-in-the-box wines and Reds: Bag-in-the-box wines. “(Ref. 3)

You will notice that many of the wineries are listed in the gluten-free winery directory pages are cafés, because warrantee free food gluten. And this is often a matter of only gluten-free bread, including in its offer. Although rare, but still present, wineries, and wine sales are marked as gluten-free. You may need to check that the official authority carry gluten-free symbols.

It is proposed that that during gluten contamination of wines in America relatively rare that a celiac should ask, wineries where the wine is gluten free, if it then ask whether it is certified by a gluten-free authority. If they do not know whether there are free Maybe you should ask what kind of barrels they use is gluten-free. The gluten-free alcohol, a history of it?? Better safe than sorry “, especially if you have been so good with the rest of your diet to avoid gluten!

Entertaining to someone with a gluten intolerance?

One of my close friends has a gluten intolerance and it comes very often to hang on, and I never know what to do, it always ends the same as a couple things: Corn Nachos. . . Chips. . . or do I buy a veggie tray. What is something delicious, that would be of any suit? Also, it would be great if it was not expensive (some, the gluten free stuff is crazy expensive here) and if it was party food.
