HERSHEY’S DOUBLE CHOCOLATE MINI KISSES COOKIES2 sticks butter, softened1 1/2 cups sugar2 eggs2 tsp vanilla extract2 cups all-purpose flour2/3 cup Hershey’s cocoa3/4 tsp baking soda1/4 tsp salt1 3/4 cups (10-oz pkg) Hershey’s Mini Kisses Milk Chocolate1/2 cup coarsely chopped nuts, optionalPreheat oven to 350 degrees. In a large bowl, beat butter, sugar, eggs, and vanilla together until light and fluffy. Stir together the flour, cocoa, baking soda and salt. Add the flour mixture to the butter mixture, beating until well blended. Stir in the mini kisses and the nuts, if using. Drop by tablespoonfuls onto ungreased cookie sheet. Bake at 350 degrees for 8 to 10 minutes or just until set. Cool slightly; remove from cookie sheet to a wire rack to complete cooling. Yield: About 3 1/2 dozen cookies. VERY CHOCOLATE COOKIES1 3/4 cups all-purpose flour1 1/2 cups sugar2/3 cup cocoa powder3/4 tsp baking soda1/4 tsp salt3/4 (1 1/2 sticks) cup butter, softened2 eggs2 tbsp plus 1 tsp milk1 tsp vanilla extract2 cups (12-oz pkg) chocolate chips1 cup chopped nutsPreheat oven to 350 degrees. Line cookie sheet with parchment paper. Stir together flour, sugar, cocoa powder, baking soda and salt in a large mixing bowl. Add butter, eggs, milk and vanilla; beat until well blended. Stir in chocolate chips and nuts. Drop dough by heaping teaspoonfuls onto prepared cookie sheet. Bake 9 to 11 minutes or just until set. Do not overbake. Cool slightly then remove to a wire rack to cool completely. Yield: 3 to 4 dozen cookies Enjoy!

Maybe you are a young mother who works or just doesn’t have a lot of free time, yet you would love to bake with your children as your mother and/or grandmother did with you. These recipes are perfect for you. Drop Sugar Cookies allow you to make delicious sugar cookies without rolling, cutting and decorating. And the White Chip Apricot Oatmeal Cookies take oatmeal cookies to a new level! So get out the ingredients, grab the kiddos and have some baking fun.

DROP SUGAR COOKIES

2 cups all-purpose flour, sifted 2 teaspoons baking powder 1/2 teaspoon salt 2 large eggs 3/4 cup sugar + additional sugar for topping 2/3 cup canola oil 2 teaspoons vanilla extract 1 teaspoon grated lemon zest

Preheat oven to 400 degrees.

In a medium bowl, sift together the flour, baking powder and salt. Mix well. In a large bowl, using a wire whisk, whisk eggs until blended. Add sugar, oil, vanilla, and lemon zest; mix well. Stir the dry ingredients into the egg mixture until well blended. Chill, covered, for at least 30 minutes. Drop cookie dough by rounded teaspoonfuls about two inches apart onto ungreased baking sheets. Mist the bottom of a 3-inch flat-bottom glass with water and dip glass in additional sugar. Press tops of cookies lightly with the glass, misting with water and dipping into sugar for each cookie. Bake cookies until lightly browned, about 8 minutes. Cool on baking sheets for two minutes then remove to wire racks to finish cooling. Store in an airtight container.

WHITE CHIP APRICOT OATMEAL COOKIES

3/4 cup butter, softened 1/2 cup granulated sugar 1/2 cup packed light brown sugar 1 egg 1 cup all-purpose flour 1 tsp baking soda 2 1/2 cups rolled oats 10-oz pkg Hershey’s Premier White Chips 3/4 cup dried apricots

Heat oven to 375 degrees.

Beat butter, granulated sugar, and brown sugar in a large bowl until fluffy. Add egg and beat well. Add flour and baking soda; beat until well blended. Stir in oats, white chips and apricots. Loosely form rounded teaspoonfuls of dough into balls and place on ungreased cookie sheet. Bake 7 to 9 minutes or just until lightly browned. Do not overbake! Cool slightly; remove from cookie sheet to a wire rack to cool completely.

Yield: 3 1/2 dozen cookies.

Two Peanut Butter Cookie Recipes

One of the best things you can do on a cold winter day is get in the kitchen and bake.   Baking warms the house, the aromas are enticing and your family will love you when they come in from the cold.   These peanut butter cookie recipes are perfect for lunchboxes, milk and cookies after school, snacking while playing board games or watching TV.   They also make great gifts and wonderful treats to share with co-workers and friends.   If you are partial to cinnamon, give Val’s Peanut Butter Cinnamon cookies a try.   For the true peanut butter fanatic, there are Double Delight Peanut Butter Cookies.   They also have some cinnamon. These cookies are fun to make and use a roll of refrigerated peanut butter cookie dough.   Both of these recipes are from my vintage recipe collection.

DOUBLE DELIGHT PEANUT BUTTER COOKIES

This recipe was cut from an old magazine. 1/4 cup dry roasted peanuts, chopped finely1/4 cup granulated sugar1/2 tsp ground cinnamon1/2 cup creamy peanut butter1/2 cup powdered sugar1 roll (approx. 16 oz) refrigerated peanut butter cookie doughPreheat oven to 375 degrees. In a small bowl, mix peanuts, granulated sugar and cinnamon. Set bowl aside. In a second small bowl, stir together the peanut butter and powdered sugar until completely well blended. Shape mixture into 24 balls. Cut the roll of cookie dough into 12 even sized slices. Cut each slice in half crosswise and flatten slightly. Shape one piece of the cookie dough slices completely around one of the 24 balls you made. Cover the ball completely. Roll each covered ball in the peanut, sugar, cinnamon mixture. Gently pat the mixture completely onto the balls. On an ungreased cookie sheets, place the balls 2-inches apart. Grease the bottom of a small drinking glass and place into remaining peanut mixture. With the bottom of the glass flatten each cookie. Sprinkle any remaining peanut mixture on the tops of the cookies and press in lightly. Bake for 7 to 12 minutes at 375 degrees or until the edges are golden brown.

VAL’S PEANUT BUTTER CINNAMON COOKIES1 cup sifted flour1/2 tsp salt1 tsp cinnamon1/2 tsp soda1/2 cup soft oleo1/2 cup brown sugar, packed1/2 cup white sugar1/2 cup creamy peanut butter1 egg 1 tsp vanillaPreheat oven to 350 degrees. Sift together flour, salt, cinnamon, and soda. Cream together the oleo, sugars, peanut butter, egg, and vanilla. Add the sifted dry ingredients to the creamed mixture. Mix together well. Drop by rounded teaspoonful onto greased cookie sheet and flatten with a fork. Baking time is approximately 12 minutes at 350 degrees. Happy Baking and Enjoy!
