Can anyone explain or direct me where I can learn how to make good tasting chinese food at home?
Any ideas or advice would be good on this subject.

Watch some TV programs about Chinese cooking would help a bit but not really much, because you have to practise the skills yourself. It is not that difficult actually, most Chinese authentic recipes are steaming or stir frying dishes.
Here is a good web-site written by a Hong Kong Chinese for your reference. Please excuse his Chinglish, but the photos and the notes he put there are still helpful.
Click the seafood box, there are a few very easy and delicious dishes which I would highly recommend.
Most of all, making good tasting food should start from buying real good fresh ingredients and that may cost you a bit more money!

Try adding oyster sauce (comes in bottled form) to your stir fries. When everythign is nearly cooked, combine some oyster sauce and add a little water. For a thicker consistency use cornflour.
A dish that my dad likes to cook is stirfried beef with ginger and spring onions. First you need to halfcook the thin strips of beef in the wok with some oil. Add spring onions (cut about the length of your pinky finger) and thin slices of ginger. Let it cook for a few minutes or so. Put the beef back in to cook again, including the juices from the half cooked meat. Add oyster sauce and some water.
If you don’t like beef, the recipe works with fish as well. -

My mother is Chinese from Malaysia, and I learned to cook from her.
Nearly all Chinese meals are cooked this way, but they taste different depending upon the sauces, veggies, meat and amount of ginger you use. Experiment with different sauces and sauce combinations to find what you like.
Heat some oil in a wok or pan and add some chopped ginger. Add meat of your choice and cook thoroughly. When it is almost completely cooked, add enough soy or teriyaki sauce to coat the meat to give it some flavor. Remove it from the wok/pan and rinse out the wok/pan so the vegetables aren’t overwhelmed by the flavor of the meat. Add oil to the wok/pan. When it is heated, add some chopped garlic and ginger if you want it. Then add whatever veggies you want. After they have cooked for a few minutes, add the cooked meat and add more soy or teriyaki sauce, just a few tablespoons. If you want more sauce, add water and let it cook until the veggies are done. If the sauce is too watery, mix about a teaspoon of cornstarch or tapioca starch with a half cup of water, and add it to the wok/pan while constantly stirring. Let it cook until it is the thickness you want, and serve.

I’m a chinese from Malaysia and grew up eating chinese food! Chinese food is easy to learn, its all about the right recipes and techniques. If you can’t find a teacher, its alright, follow the recipes closely and you can still make delicious chinese food, here are a few recipes to start you off with!
Do enjoy trying, perfect it and modify it as you gain experience!Bak Kut Sooi (Sweet, Sour and Spicy Spare-ribs)
Ingredients1 kg spareribs, chopped into 4cm pieces
Grind and combine:
5 cloves garlic
10 dried chillies, soaked and seeded
1 tbsp preserved bean paste (tau cheong)
3 tbsp oil
1 cup water
Seasoning:
1½ tbsp sour plum sauce
1 tbsp tomato sauce
1/2 tsp sugar or to taste
1 tbsp light soy sauce
Method
Heat oil in a wok and fry ground ingredients until fragrant. Add in spare-ribs and stir-fry well. Cover the wok and cook for four to five minutes.Add water and simmer the spare-ribs over very low heat. Cover the wok and cook until the meat on the ribs is tender. Add seasoning to taste and continue to simmer until the gravy turns thick. Serve immediately with plain hot rice or some mantou (plain pau) .
black pepper chicken :
Ingredients
600g chicken, chopped
700ml water or fresh chicken stock
1 tbsp oil
1 tbsp sesame oil
1 tbsp chopped garlic
1 tbsp chopped ginger
1 tbsp ground black pepper
1 tsp fermented black beans, rinsed and minced
Seasoning
1 tbsp oyster sauce
1 tbsp abalone sauce
1 tbsp light soy sauce
1/2 tsp dark soy sauce
1 tsp sugar
1/4 tsp pepper
Salt to tasteThickening
1 tsp cornflour mixed with 1 tbsp water
Method
Marinate chicken with seasoning for several hours.Heat oil and sesame oil in a saucepot. Fry chopped ginger and garlic until fragrant.
Add ground black pepper and fermented black beans and stirfry until fragrant. Add marinated
chicken and continue to fry for 4-5 minutes.Pour in water or stock and bring to the boil. Reduce the heat and simmer for 30 minutes until meat is cooked and tender. Add thickening to mix.
BUTTERED FRAGRANT RICE:
.Ingredients
600g fragrant long grain rice, rinse, wash and drain in a colander
100g frozen peas
3 tbsp butter
1 onion, halved and sliced
5½ cups waterSpices
5 cardamoms, lightly smashed
2 cloves garlic, with skins on and lightly smashed
5cm cinnamon stick
1/2 tsp fennel
3/4 tsp cumin
4 cloves 1/2 tsp black peppercornsSeasoning
1/2 tsp salt
1 tsp chicken stock granules
Method
Put butter in a large saucepan over a medium heat. Add onion and fry until soft, lightly browned and fragrant. Mix in the spices and fry for 40–50 seconds to a minute. Add the rice and stir well to blend.Pour in the water and add the seasoning. Bring to a boil then bring down the heat to low. Cover the saucepan and cook for 10–12 minutes. Remove the cover and give the rice a quick stir.
Add the peas the cover the saucepan again.
Continue to cook for 8–10 minutes or until rice is done. Leave the rice to stand for 10 minutes before fluffing up the rice.

Know any restaurant owners? Hang around or get a part time job in a chinese restaurant and watch the cooks. There is a certain technique to cutting and combining and cooking the food. Once you see it, you will always remember. Then you can collect the recipes and do it yourself at home.
That’s the fastest and easiest way.
