the protein is close to half in white, half in yolk.
BUT the yolk has more nutrition overall, inc minerals and the fat REQUIRED to assimilate the protein…we need the yolk adn raw is best if it comes form a pastured chicken.
the white, when raw, has a protein inhibitor that prevents u from absorbing the protein. .. -
